For me I really do enjoy watching some of the Locking picking lawyers content and he is an expert when it comes to picking locks!
Another few are mental outlaw (although I think everyone knows of him here) and Steven Bridges who makes videos on card counting at casinos and he shows how much he wins/loses from playing

I discovered a channel called ‘Just Alex’ awhile ago, and I’ve binge-watched most of his videos. He makes videos about a variety of activities he engages in. For example, two years ago, he started beekeeping as a hobby. In these videos, he shows the progress he has made since then, taking care of his bees and harvesting their honey.
He also has videos on collecting mushrooms, growing crops, and traveling around Europe.
What I like about him is how calming his videos are and the amount of effort he puts into making them interesting, without resorting to clickbait content.

Stuff Made Here: Crazy talented maker with a huge set of skills, tools and ideas. Add a good portion of humor and a a slightly annoyed wife who has to test all the inventions. Very inspiring for makers and entertaining for non-makers. Michael Penn is a guy solving math olympiad problems while doing backflips.
Cracking The Cryptic is amazing. Their videos are so interesting to watch.
I don’t know if Scott Manley is niche (1,6 million subscribers), but if you are interestet in everything about space, rockets and sometimes flying, this is the channel for you.

MartSnack - okay, this one is kind of cheating because there’s only one video so far, but if you like obscure and highly technical video game challenges like the SM64 A Button Challenge, it’s one of the best damn videos on the internet right up there with pannenkoek’s classic Watch for Rolling Rocks - 0.5x A Presses. It’s satisfying, interesting, and also surprisingly funny and relaxing. I’ve watched it like 7 or 8 times by this point, and I’m gonna watch it again after I submit this comment. Also if you like it def subscribe and hit the bell, he’s been working on a new video for months and has been giving updates in the comments as recently as a few days ago, so hopefully it’ll come out eventually!

Retro Game Mechanics Explained - Probably the highest production value you’ll ever see for videos on this topic–combines a deep knowledge of retro game hardware and programming with beautiful visualizations and demos. His video on Pac-Man ghost behavior is pretty representative of how he takes a subject and drills down to the assembly to show you exactly what’s happening with some really cool graphics that show what the code does step by step.

Bill Making Stuff. He’s a dude hanging out in his attic making cool miniature sculptures out of junk. He has a wicked, dry, British sense of humour (also his brother “Dan Does” is also on YouTube but he tends to make more horror themed stuff). I also enjoy North of the Border, who makes awesome sculptures out of mostly polymer clays.
